Early filtering, classified by quality and fortified at 15º with the best distilled wines sent to the traditional racks. Put into the classical Jerez Criaderas y Soleras system of dynamic ageing in the 9th criadera, where the biological ageing takes place under a layer of yeast. Traditional oak casks, preferably American, with a capacity of 30 and 36 @. Aged for at least 5 years, passing through the different criaderas until it reaches the solera, from which it is drawn out for consumption. Fino sherry, very mature, naturally pungent in the amontillado style.
